I’m trying to copy the text from the script editor over to Photoshop for a portfolio spread I’m working on. However with the size of the script changing the text color by hand will take forever. I cant just do a screen shot because the text will be going over the top of an image.
What is the font Maya uses and how can I keep the colors of the text?

I don’t know whether what you are asking is even possible. You should be able to take a screen shot, and then sample the background color in PS and remove it from the layer. Paste the screen cap in a new layer, use select->color range in PS to select the background color, then hit delete. You may want to add a drop shadow, or something else to make it stand out against your background.
Also, work on your PS skills and put that in your portfolio. 
What I ended up doing is stitching together a few screenshots and then to make it transparent i made the text white and the background black in the script editor and used that as a mask in PS.
The only downfall to that is i cant edit anything or change the size of text easily.
